We're currently getting together ideas for a recipe book - I'm sure many of you will agree that with PNI making quick healthy food for family & self can be such a difficult thing at times - so we thought we'd try and help out with some of our own quick but tasty meals. Sometimes it's the incentive we need to do it
Also included will be good wines to have with the meals, little anecdotes to cheer us up / spurr us on - maybe even some little funny stories about our little ones' ways etc etc - that kind of thing. A sort of fun cook book - also we'll include some recipes suitable for the little ones to help with and weaning recipes also if any one has some favourites. Please feel free to add your own recipes and little verses / poems / sayings / music that is great to cook / work to / etc etc that kind of thing.
Also if any one has pics of the meals mentinoed please feel free to upload them to our group photobucket account (PM a mod for log in details) that would be great
Please only post your own recipes or recipes that you have adapted to avoid any copyright issues - thanks Thanks you for all your support - I'm currently putting some ideas down and including the recipes here and others that have been submitted Could do with your help on this .... Ingredients
Peppers, pesto, garlic, feta, oil, salt and pepper
Method
Had some peppers leftover on Saturday and wanted something quick and easy to go with quiche.
They were red, sweet, long ones. Halved them, keeping stalks on, but de-seeded. Placed skin side down in oven dish and filled with layer of green pesto, a little crushed garlic, feta cheese, drop of oil, salt, pepper.
Cook for 15 - 20 mins @ 190
Really yummy.

It sort of came about from a thread that Hopeful started about good food - sure others will find it useful too Great Helenr - please post as many recipes etc as you would like to - even if we don't have room for everyone's recipes (which I'm sure we will) I'd certainly love to try out a good few

Basic Quick CurryIngredientsOlive oil, 1x sliced onion, 2x chicken fillets chopped/ cubed, teaspoon crushed or minced garlic, 1 green or red chilli chopped and de-seeded, 2 tablespoons of single cream, tomato puree, teaspoon of tumeric/ ground coriander/ ground cumin, handful of sliced button mushrooms MethodHeat the oil and cook the onion for one minute. Then add chicken and cook for 5 minutes more. Add spices, chilli, garlic, tom. puree, mushrooms and cream. Simmer for 15 minutes and serve with rice or naan. *Good with cider!

Great I'' sne dyou a rough copy of the recipes once they're sorted and maybe you could suggest a wine that would be good with them?? Anyone else got any recipes? GFavourite quick meals? Pics / photo's of your little ones with food / recipes taht kids like to cook? That kind of thing

Name: ‘’Tagliatelle (had no spaghetti!) alla Carbonara’’ Ingredients: Olive oil (good dash) Big knob of butter Pack of streaky bacon (rindless if poss.) – cut with scissors into strips 3 eggs beaten Handful of shaved parmesan Handful of grated mozarella Some fresh parsley, chopped coarsely About 5 tablespoons of single cream (or ½ standard carton) Ground black pepper Tagliatelle (packet of?) Method:Fry off bacon first for few minutes and put aside Mix beaten eggs, chopped parsley, 2 cheeses and cream. Add ground black pepper too. Cook pasta till al dente and then immediately add egg mixture to cook in the heat. Also add bacon. Serve with sprig of parsley and shaved parmesan. This was really yummy:
Butternut Squash and Spinach Soup ----------------------------------------------------
Slice a chilli/ some onion/ garlic and fry for 5-10 mins
Peel the squash and cut flesh into bite sized chunks - add to frying pan and cook for further 10 mins until browning
Pour chicken stock and sherry into saucepan and add coriander, cubed potatoe & contents of frying pan. Simmer for about 15-20 mins
Blend the mixture- return to pan and heat through. At last minute add strips of fresh spinach and cook until wilting
Salt, pepper, serve.
Really spicey, but lovely XxX

ooooh m8 that pasta looks amazing! well done you another recipe i do is a rice salad-perfect for bbq's or a quick snack 2 sachets of frozen white rice 1 red pepper 1 green pepper 1 small tin sweetcorn 1 handful raisins/sultanas 1 small carrot cook the rice as per directions on packet chop peppers, and grate the carrot put rice into a large salad bowl add sweetcorn, peppers, carrot and raisins/sultanas chill for 5-10 mins and serve with pitta bread and houmous for a snack or with jacket potato and grilled/bbq chicken. delicious extra: if serving with chicken, mix 1 desert spoonful of runny honey with 1 teaspoon french mustard, heat for 30 seconds and drizzle over the chicken just before serving.
